Note

1. The classic Shui Ping form: a byword for correctness and balance

  • Origin and idea: the Shui Ping form has been bound up with the history of tea for centuries, famous for the fact that set on still water the pot floats upright and does not tip.

  • Practical, unlaboured lines: the round barrel of the body swells gently towards the base for a steady centre of gravity; the straight conical spout tapers upwards, and the softly curved ear-shaped handle answers it in perfect symmetry.

  • Minimal and never dated: its plain beauty and decisive lines, free of ornament, keep this pot standing as the elder of any tea table, at home in both traditional tea drinking and a modern setting.

2. Pure Zi Ni character and an outstanding pour (210ml)

  • Raw-ore Zi Ni clay: a warm purple-brown tone flecked with mineral grains; the double-pore structure characteristic of Zi Ni clays holds heat deeply while still breathing, so the tea comes out soft in flavour with a sweet finish and markedly less bite. Season the pot regularly with tea and its surface will grow glossy and smooth as a child's skin.

  • A stream that carries, and cuts clean: the straight spout characteristic of the Shui Ping form generates a very strong flow — the water flies straight in an even round jet, gathers precisely and stops cleanly, never running back down the body.

  • 210ml, ideal for guests: just the right size for a tea table of 3–5 people; the open interior lets the buds unfurl evenly and give up everything they hold, especially with shou pu-erh, Shan Tuyet ancient-tree tea, black tea and aged oolong.
