Using a tea pitcher (also called a fairness pitcher) is an important part of the art of tea, and is especially widespread in the tea cultures of Vietnam, China and Taiwan. Here is why you should use one:

After brewing in the teapot, the tea is stronger at the bottom than at the top. Poured straight into the cups, the first and last drinker get different tastes. A pitcher lets you empty the pot completely, then divide the tea evenly among the cups, so every cup tastes the same.
