Using a tea pitcher (also known as a fairness pitcher) is an important part of the art of tea, and is especially widespread in the tea cultures of Vietnam, China and Taiwan. Here is why you should use one:

After brewing in the teapot, the liquor is stronger at the bottom than at the top. Poured straight into the cups, the first and last drinker get a different taste. A pitcher lets you empty the teapot completely, then divide the tea evenly among the cups, so every cup tastes the same.

If the teapot is not emptied after brewing, the leaves keep steeping in the hot water and the tea turns astringent and bitter, losing its aroma. A pitcher ends the steeping at exactly the right moment.
