Using a tea pitcher (also called a fairness pitcher) is an important part of the art of tea, and it is especially widespread in the tea-drinking cultures of Vietnam, China and Taiwan. Here is why you should use one:
1. It makes the flavour even
After the tea has steeped in the pot, the upper and lower parts of the brew differ in strength. Poured straight into the cups, the first and the last drinker get different flavours. A pitcher lets you empty the pot completely and then divide the tea evenly among the cups, so every cup tastes the same.
2. It keeps the tea from over-steeping
If the pot is not emptied after brewing, the leaves keep steeping in the hot water, turning the tea astringent and bitter and stripping away its aroma. A pitcher ends the steeping at exactly the right moment.
